Jerked pork chops with a fruity rice

Ingredients

Serves 4

  • 4 lean pork chops
  • 60ml Maggie’s Exotic Foods jerk seasoning mix
  • 240g long grain rice
  • 3 spring onions, white and green parts chopped separately
  • 1 400g tin of mixed fruit
  • 150 ml chicken or other stock
  • 10ml lime juice
  • 5ml salt or to taste
  1. Preheat oven to 220o C
  2. Season the chops with 30ml of the jerk seasoning,  brown on both sides in a lightly oiled frying pan and set aside
  3. Add the rice and white part of the spring onions to the same pan with the rest of the jerk seasoning and stir fry till brown all over
  4. Drain the fruit reserving the syrup.
  5. Add the stock and about ½ of the syrup to the rice with the lime juice and salt, mix well and turn into and oven proof dish
  6. Place the chops over the rice mixture, cover with foil and bake for about 20 minutes
  7. Sit in the fruit and green part of the spring onion adjusting seasoning as necessary
  8. Cover and cook for a further 15 minutes. Serve
