Exotic Catering

Here are examples of some of the speciality exotic dishes available. The exotic buffet menus suggest some excellent combinations of dishes, but any combination of the following dishes is possible.

Hot Meals

Starters

  • Light spicy chicken soup
  • Pepper soup: light African soup with herbs, spices and pieces of beef or noodles
  • Kelewele: slices of plantain marinated in ginger and spices and deep fried
  • Pan fried bean cakes, on a spinach and sweet pepper brochette
  • Stuffed plantain rings, filled with a seasoned beef of spinach filling

Main courses

  • Mango chicken or pork and mango curry, marinated in a blend of spices and pan fried with chunks of mango
  • Sweet and spicy black-eye beans, slow cooked with tomatoes, onions and herbs
  • Groundnut soup with chicken/fish/beef or roasted vegetables
  • Curried chicken, goat or mutton: Jamaican specialty of marinated chunks of curried mea in our spice blended curry
  • Chicken jollof rice a tantalizing blend of puree of tomatoes, onions peppers and Nija spices
  • Bobotie curried sweet and spicy lamb/beef mince bake
  • Spinach with chicken and melon (egusi) seeds

Dessert Option

Each dish individually priced per head

  • West Indian rum trifle: layers of sponge, fruit and cream with ginger and rum
  • Maggie’s exotic cheesecake, with exotic fruits
  • Platter of exotic and seasonal fruits, served with tantalizing dips
  • Guernsey style apple pie: hot pieces of apple, suet and sweet spices
