Nija This and That Mix
In Nigeria hardly any sauce or meat is cooked without the addition of some kind of seasoning. ‘Nija’ this and that seasoning is inspired by the mix we commonly used when I was growing up and learning to cook. A little bit of this was added to chicken, beef and other types of meat dishes and a little bit of that was added to a soup or stew or what ever else was on the stove.
How to use: For an authentic taste of Nija, sprinkle or rub 2 teaspoons on meat, poultry or any food really.

Jerk Seasoning Mix
How to use: Traditional Jamaican means of flavouring meats and fish. Each household has its own favourite mixture therefore the source of the jerk seasoning determines the particular flavour. Add a teaspoon of two to Pork, chicken or beef before roasting. Try mixing with mayo and leftover turkey meat for an exciting filling.
