Simple Curried Chicken

Ingredients

serves 6

  • 6 to 8 pieces of chicken
  • 5 ml salt (or to taste)
  • 5 ml chilli powder (to taste)
  • 15ml South African Curry Mix (available from Maggie’s Exotic Foods)
  • 15ml lemon juice
  • 30ml natural yogurt
  • 15ml cooking oil
  • 30ml chopped chives (garnish)
  • 1 lemon, sliced (garnish)

Method

  1. Clean and wash the chicken pieces thoroughly then drain well.
  2. Rub the lemon juice and salt into the chicken pieces in a bowl, and set aside.
  3. Combine the curry mix, chilli, oil and yogurt.
  4. Make deep slits in the chicken pieces and rub in the marinade.
  5. Allow to marinade for about 30minutes or more or overnight.
  6. Bake chicken in the oven at 200Oc for 15-20 minutes or can be pan fried in a little bit of oil turning the pieces over to cook on both sides.
  7. Garnish with chopped chives and slices of lemon.
