Ingredients

- 6 to 8 pieces of chicken
- 5 ml salt (or to taste)
- 5 ml chilli powder (to taste)
- 15ml South African Curry Mix (available from Maggie’s Exotic Foods)
- 15ml lemon juice
- 30ml natural yogurt
- 15ml cooking oil
- 30ml chopped chives (garnish)
- 1 lemon, sliced (garnish)
Method
- Clean and wash the chicken pieces thoroughly then drain well.
- Rub the lemon juice and salt into the chicken pieces in a bowl, and set aside.
- Combine the curry mix, chilli, oil and yogurt.
- Make deep slits in the chicken pieces and rub in the marinade.
- Allow to marinade for about 30minutes or more or overnight.
- Bake chicken in the oven at 200Oc for 15-20 minutes or can be pan fried in a little bit of oil turning the pieces over to cook on both sides.
- Garnish with chopped chives and slices of lemon.
